Sausage, Squash & White bean cassoulet

So what’s the difference between a casserole and a cassoulet? To be honest I’m not too sure, but cassoulet sounds much better than ‘sausage stew’ AND it’s French. The French sure know how to cook, they don’t compromise on flavour, and because this dish..(however humble and wallet-friendly) was delicious. Jam packed with flavour and a sure mid-week winner in our house!

Autumn hasn’t yet kicked in here but nevertheless the kids are back at school and so with so much to cram into each day the slow cooker comes out and becomes my saviour! 20160908_172249

Cost: £2.33 total….approx 59p per person

Ingredients

1 pack of butchers select sausages (99p)

1 onion, chopped (5p)

1 tin of butter beans (33p)

1 slice of bacon (leftover from Monday nights dinner if you’re following the meal plan, you may have some left!) (18p)

3 cloves garlic (9p)

1 tbsp tomato puree (2p)

1.5tsp paprika (1p)

1 tsp dried oregano (1p)

Black pepper (1p)

500ml veg stock made with hot water and stock cube (3p)

2 tbsp plain flour (2p)

1 butternut squash – peel, de-seed and cube (59p)

Method

Chop the sausages into thirds to make it seem you have more meat in there! Slice your bacon into thin strips.

Fry them both with the onion in a splash of oil (luckily my slow cooker can be used on the hob, if yours can’t then you need to get another pan out)

Once the sausages are browned squeeze in the garlic. Mix in the squash, puree, herbs, pepper and stock. Stir.

Sprinkle in the flour and leave to cook (depending on your slow cooker…I did low for 8 hours)

In the last hour I drained the tin of beans and put them in.

Done.
