Well you must have been living under a brick yesterday if you didn’t notice it was pancake day!
We love any excuse in our kitchen to flip a few pancakes in the air, so yesterday we embraced it as we always do. I’m not a huge fan of savoury pancakes, and couldn’t really justify the kids just eating nutella and pancakes as a main meal so decided to knock up a soup before we starting pigging on pancakes!
I know, we seem to eat a lot of soup in this house but it’s so quick to make, so cheap to do and it’s winter after all – we need a bit of internal warming!
Creamy Tortellini Soup
Splash of Vegetable Oil (1p)
1 onion, finely chopped (9p, Aldi)
2 garlic cloves, sliced (6p)
Tin of chopped tomatoes (31p, Aldi)
900ml of veg stock made with 2 vegetable stock cubes and hot water (6p, Aldi)
1 tsp dried mixed herbs (1p)
1/2 cup greek yoghurt (1op, Aldi) – If you buy a full one and need to use some up why not try my ‘Palak Paneer recipe’?
2 packs of 250g of cheese tortellini – 500g in total (£1.30, Aldi)
Heat the oil in a large pan, add the onion and garlic and cook for about 4 minutes or until soft.
Add the chopped tomatoes and veg stock. Stir together. Add the mixed herbs and salt and pepper to taste. Simmer for 15 minutes with the lid on.
Take off the heat and blend with hand blender.
Stir in the yoghurt and then stir in the tortellini
Return to the heat and put the lid back on, cook for about 7-8 minutes or until the tortellini is soft.
Sprinkle some cheese on the top if you have some, if it had been summer and I’d had fresh basil that would also have been nice on top
