Spanish Ribs

OK these don’t look appetising in the photo but trust me they are delicious and take very little effort to make!

We recently bought half a pig from a farmer friend. Cost wise it was cheaper than getting it from the supermarket AND we know it was local and has been well looked after.

The only downside was trying to cram it all in our tiny freezer….we got there in the end but there was a small portion of ribs that just couldn’t fit in! Ah well, let’s add them to the tapas menu…..

Cost wise it was approx £1.29 for the whole dish


 

Spanish Herby Ribs

Get out a dish and make the marinade by combining 8tbsps of oil (4p), 2 cloves of minced garlic (6p), 1 deseeded and chopped chilli (15p), 1 tbsp of dried oregano (2p), 1 tsp sugar & some cracked black pepper (1p), 1 tbsp of lemon juice (1p).

Chop the ribs into bite sized pieces and pop them in the marinade. Cover the bowl with clingfilm and leave in the fridge for at least an hour.

When ready…..pop them in an ovenproof dish with a lid on…..I had them in at 190c for about 40 mins…just while I finished off the rest of the tapas dishes I was making. They may not need this long, or may need longer depending on your oven so just keep your eye on them!
