Another tapas recipe from Saturday Nights Tapas!
I have made this dish many many times and it is absolutely delicious. It is always the first thing to go.
This cost £1 to make in total
1/2 onion (5p, Aldi)
1 clove garlic (3p)
1 tin chopped tomatoes (31p, Aldi)
1/2 tsp paprika & 1/2 tsp chilli powder (1p)
Pinch of sugar and a pinch of salt (1p)
600g white potatoes (35p, Aldi)
Splash of oil (2p)
50g cheese (22p, Aldi)
Peel and cube your potatoes and lay them on a baking tray. Pat them dry with kitchen paper to remove any moisture. Toss in oil and season with salt.
Pop them in the oven at about 190c for about 40 mins (or until crunchy and cooked) . Make sure you keep your eye on these and turn them over when necessary or they can burn very easily!
Whilst you’re waiting for them to cook you can make your tomato sauce for the top….
Heat the oil in a pan, add the onion and fry for about 5 minutes until softened. Add the garlic, tomatoes, tomato purée, paprika, chilli powder, sugar and salt and bring to the boil, stirring. Simmer for 10 minutes. Set aside until your potatoes are ready.
When the potatoes are cooked, transfer them to a serving bowl…warm through the sauce and pour over the top. Top with the grated cheese…pop them back in the oven for a couple of minutes for the cheese to melt.
