For a start this is a super quick dinner to knock up so is just perfect for week nights!
It cost me £2.63 in total for the whole meal. Usually the packs of basa fillets in Aldi contain 2 fillets but this week I managed to find one with 3! So it fed 2 adults and 1 child so a total of 87p each for us. However if you are serving this as a couple then it’s £1.31 each.
Splash of oil (1p)
1 onion, finely chopped (9p, Aldi)
1 carrot, cubed (4p, Aldi)
85g chorizo (left over from Saturdays tapas night) cube it up (67p, Aldi)
1 tin butter beans, drained (33p, Aldi)
Pack of basa fillets (£1.49, Aldi)
Heat oil in a pan and add the onion. Fry for 3 minutes.
Add the carrot and cook for 4-5 mins.
Add chorizo, cook for 5 mins.
Add butter beans and turn heat down low. At this point you may need to add some water if it’s sticking. Add the parsley. Leave the pan on low whilst you cook the fish.
Heat oil in a frying pan. Season the fish on both sides with salt and pepper. Cook in the pan turning once. It is cooked when it is white in the middle.
Serve the fish on top of the bean mixture with a wedge of lemon or lime (optional)
