Diet Coke Chicken Drumsticks

This weeks ‘Friday Night Feast’ was chicken legs and wedges…it cost £3.08 in total for 4 people so about 77p each.

Last week when I was clearing some space under the stairs I came across some wires that we had been missing for a year! The wires were for our Nintendo Wii, we had been searching crazily for them for the last 12 months but nobody had thought of looking in a flowerpot under the stairs! The news soon spread through the house and with all the excitement we decided to celebrate by throwing a ‘mario cart’ night the following Friday!

I decided I didn’t want to be cooking anything complicated that night…I needed to save my energy for overtaking everyone around Bowsers castle…

This recipe is perfect for bunging in the oven and getting on with whatever you fancy!

In the end though, despite finding the long lost wires, the kids realised they had lost the Mario cart disc….so we were back to square one…hey ho at least the food was good!


 

Diet coke chicken drumsticks with potato wedges

Ingredients

1 pack chicken legs (£2.25, Aldi)

1 can diet coke (39p, home bargains)

1 tbsp brown sugar (1p)

1 tsp soy sauce (1p)

1 tbsp ketchup (1p)

1 tsp garlic powder (1p)

Potatoes, cut into wedges (40p, Aldi)

Method

Preheat the oven to 190.

In a bowl mix the coke, sugar, soy sauce, ketchup and garlic powder.

Lay the drumsticks in an oven proof dish. Pour over the coke mixture and cover the dish with foil. Pop in the oven for about 30 mins.

After 30 mins..take the dish out and transfer the drumsticks one by one onto a plate. You should have some liquid left in the dish. Pour this into a small saucepan.

Put the drumsticks back in the dish in the oven without the foil this time…cook for another 30 mins.

Put your potatoes (cut into wedges) on a baking tray and toss in oil. Season with salt and pepper. Put these in oven too. Remember to turn them halfway through cooking!

Put your small saucepan that contains the coke mix on the hob. Heat until it bubbles and then it reduces until it is thicker…like ketchup consistency..

Pour it over the drumsticks for the last 5 minutes of cooking.

Check they are cooked thoroughly before serving!
