Cost £1.81 for the entire cheesecake. I cut it into 8 slices so just over 22p a slice. But be warned, I am a greedy girl. Most people could easily make this into 12 slices…
So last week I was banging on about Aldi having lemons on their super 6 deal. I was so excited I went ahead and made a lemon drizzle cake. Trouble is, lemon drizzle cake doesn’t require a full bag of lemons. Now normally I wouldn’t worry, my lemons would go beautifully with a vodka tonic…but as i am taking part in ‘dry January’ that is out of the window too!
There was nothing else for it, a cheesecake was on the cards!
I made this Sunday afternoon (as the weather was far too miserable to be outside, the boys were hogging the xbox and I wanted to avoid the ironing). It has to sit a while in the fridge so we didn’t get chance to eat it last night, BUT it meant we had something delicious to look forward to after our tea tonight of Thai Fishcakes.
As the title suggests, this goes nowhere near the cooker so is an ideal recipe to make with kids!
400g digestive biscuits (31p, Aldi)
125g butter (38p, Aldi)
200g soft cream cheese (49p, Aldi)
150ml double cream (34p, Aldi)
75g caster sugar (7p, Aldi)
2 lemons (22p, Aldi)
Bash the biscuits with a rolling pin in a large bowl. Use your muscles! We don’t want any big pieces spoiling everything!
Melt the butter in a bowl in the microwave. Add to the biscuits. Mix.
Pour into a greased flan dish and press down with the back of a spoon until it’s level. Pop in the fridge until hard.
When it comes back from the fridge…get out a new bowl and whisk the cream cheese and cream until it forms stiff peaks. Add the caster sugar..Mix again..add the juice of the lemons and whisk again. Pour over biscuit base and smooth with back of spoon to even it out. Grate the lemon zest on top. Pop it back in the fridge…overnight if possible..
