Falafel with green beans & cous cous

This is a super quick dinner to make. I arrived home from work tonight at 5pm and by 5.30 I was sitting down tucking into this. Whats more is there is very little washing up. Result!

The cost is excellent and it is suitable for vegetarians and vegans! What’s not to love??

Ingredients

1 tin chickpeas, drained (33p Aldi)

2 cloves minced garlic (6p)

1 tsp ground cumin (1p)

1 tsp ground coriander (1p)

1 tsp harissa paste (1p)

2 tbsp of plain flour (1p)

Salt & Pepper

Dash of lemon juice (1p)

Cous cous (39p, Aldi)

Half a pack of green beans (45p, Aldi)

Method

Get out a large bowl. Put the chickpeas in and whizz them up with a hand blender until smooth.

Add the garlic, cumin, coriander, harissa, lemon juice, salt & pepper (to taste). Mix it up with a spoon.

Mix in the flour and then divide the mix into 8 balls.

Fry these in a frying pan of hot oil for about 3 mins on each side. They should be nicely browned on the outside and soft on the inside.

Serve with the green beans and couscous. If you are really hungry maybe you could have pitta breads too!

This served 2 and was absolutely delicious! A flashback from our Egyptian holiday many moons ago.
