Spaghetti Bolognaise (or Spag Bol for short)

Cost a total of £2.36 for 4 people so 59p each

At 18 years old I left home to forge my path into adulthood. Back then, I was confident that I knew all there was to know about the world. So self-assured that I could get along ‘just fine’ because I was an ‘adult’. Armed with just an armful of possessions (mainly shoes) and one recipe in my head for ‘Spaghetti bolognaise’ I was optimistic about my future…

Fast-forward to today and my 30 year old self no longer has the money or space for copious amounts of shoes (sigh). I do however still have my delicious Bolognaise recipe! Of which I have tweaked and twirled through the years to become what it is today…it now sits as a firm family favourite on our meal planner and when the time comes, I sincerely hope to send my boys off on their path with the same optimism and recipe for Spag bol just like I did so long ago…

From my head…spag bol

Ingredients

1 onion, finely chopped (9p Aldi)

300g bag of frozen Quorn mince (£1.48 Aldi)

1 beef stock cube (3p Aldi)

1 tsp tomato puree (2p)

1 400g tin chopped tomatoes (31p Aldi)

3 minced garlic cloves (9p)

2 tsp mixed herbs ( 1p)

Glug of red wine (optional)

1 tsp balsamic vinegar (1p Aldi)

1 tsp Worcester sauce (1p)

Salt & Pepper (1p)

100g mushrooms, chopped (20p Aldi)

Half pack of Spaghetti (10p Aldi)

Method

Fry the onion in a little oil until it starts to go translucent.

Add the quorn to the pan. Mix the stock cube with about 1/2 cup water. Add to pan. Mix. Stir for about a minute.

Add the tomato puree, stir. Add the chopped tomatoes, stir. Add the garlic, stir. Add balsamic, worcester sauce, mushrooms and a glug of red wine (if you want! I had a bottle on the side still open from xmas so it was too tempting not to put it in! It gives the dish more depth but is not essential.)

Let it all bubble then turn it down to a simmer. Add your herbs and season with s&p to taste. If it starts to look like theres not enough liquid add a bit of hot water…and put the lid on.

Now make the spaghetti according to pack instructions.

Your bolognaise should be ready about the same time as your pasta.

Serve! If you are super hungry you might want garlic bread? Aldi do 2 garlic breads from the freezer aisle fo 62p! Go on, treat yoursen! (By the way  I am in no way on commission from Aldi, nor do I work there! I just find it the only place that helps me feed my family on an affordable budget. High five Aldi!
