Pea and Ham Soup

This week I bought a Gammon Joint from Aldi for £2.99 for 750g.

The plan was to slice it and use it for sandwiches in packed lunches, some would be thrown into a carbonara recipe and the rest would be used for this delicious soup that I stole from the James Martin Cookbook.

Pea and Ham Soup

Ingredients:

1 bunch spring onions, chopped (45p – Aldi)

2 cloves garlic, chopped (probably 5p if that!)

25g unsalted butter (packet was 89p – I used a 10th so that’s less than 9p)

450g peas (I used frozen) so about 30p worth if that

A third of the ham, cubed so £1 worth

600ml stock (just used a stock cube – chicken or veg) these are about 7p each at Aldi

Salt and Pepper to taste

Fresh mint sprigs (if you have them) I didn’t bother as it’s winter and mine in the garden have disappeared 😦

Method

1. Sweat the onion and garlic in the butter in a covered pan for 5 minutes, without colouring.

2. Add the peas, ham and stock, and bring to the boil. Simmer until the peas are tender.

3. Season to taste and serve sprinkled with the optional mint.

I served mine with part-baked rolls from Aldi at 39p for 4 rolls.

Total Cost – £4.24 including the rolls (£3.85 if you don’t want to serve bread)

It served 4 and then 1 person for lunch next day so about 85p per portion with the bread
